Note: PrimaMix Bread Mix - Baking instructions are based on 3.2l bread making machine. Please adjust ingredients according to volumn of bread pan.
 
Baguette

Water (chilled) 290gml
PrimaFlour Plain Flour 500g
Salt 8.8g (1 1/3 tsp) (8.8g)
PrimaPower Crusty Bread Improver 2.7g (1 tsp) (2.7g)
Instant Dry Yeast 5g (1 2/3 tsp) (5g)
ARE THESE USING HOMEBAKER MEASURING SPOON?
Method:
Add ingredients into bread pan.
Select DOUGH setting and press START.

Note: after 20 minutes of mixing, open the lid and cover with a damp cloth to prevent crusting on surface of dough during rise.

Instructions
  1. To prepare dough for baking after removing from machine:
    Using plastic spatula, remove dough from bread pan and place on lightly floured surface.
  2. Divide the dough to desired weight (50-180g), shape it round and place on the work bench cover with a piece of plastic sheet/wrap. Leave to rest for 10 minutes.
  3. Mould to shape (round or elongated as desired).
  4. Place rolls on lightly floured baking pan, cover with plastic sheet/wrap and stand in a warm place until doubled in size (about 60-75 minutes).
  5. Remove plastic wrap, make a slit or two on the surface of dough with a pen-knife at an angle of 45 degrees.
  6. Bake in preheated oven (220(C/428(F) for 15-18 min or until golden brown.
  7. Remove from pan, then cool on a wire rack or serve warm.
 
   

 

Pizza Dough

Water (Chilled) 245gml
Olive Oil 25g (2 tbsp) (25g)
PrimaFlour Plain Flour 450g
Sugar 13g (1 tbsp) (13g)
Salt 6.6g (1 tsp) (6.6g)
Instant Dry Yeast 4.5g (½ tbsp) (4.5g)

Method:
Add ingredients into bread pan.
Select DOUGH setting and press START.

Instructions
  1. To prepare dough for baking after removing from machine:
    Using a rubber or plastic spatula, remove dough from bread pan and place on lightly floured surface.
  2. Divide the dough to desired weight (120-150g), shape it round and place on the work bench cover with a piece of plastic sheet/wrap. Leave to rest for 10 minutes.
  3. Put one ball on a floured board and roll it out into a round shape.
    Place on lightly greased pan, punch with a fork, repeat with other balls of dough.
  4. Bake the base for 6-8 min before adding the topping, then bake for 10 min at 200ºC

Makes approx. 5-6 servings.
