Starter:
| 30g | Prima Superfine Wholegrain Flour |
| 50ml | Water |
| 4g | Instant Yeast |
Ingredients A:
| 100g | Prima Top Flour |
| 100g | Prima Superfine Wholegrain Flour |
| 10g | Baking Powder |
Ingredient B:
| 200g | Mashed Cooked Yam |
| 140g | Sugar |
| 120ml | Thick Coconut Milk |
| 50g | Egg |
| 40ml | Water |
Batter Colouring:
| 1-2 drops | Colouring Paste of Choice |
1. Mix Starter Ingredients, set aside for 30 mins.
2. Sift Ingredient A and set aside.
3. Pour Ingredient B in a mixing bowl and mix well.
4. Fold in Ingredient A and Starter Mix into the batter.
5. Rest batter for 15 mins.
6. Divide the batter into 2 bowls and add food colouring separately.
7. Fill the batter into moulds lined with paper cups.
8. Create a cross pattern with an oiled palette knife.
9. Steam over high heat for 20 mins.
Makes approx. 5 cakes.
