Christmas Scones

INGREDIENTS

Vanilla Cake Layer

325g Prima Top Flour
13g Baking Powder
60g Sugar
2.5g Salt
80g Cold Unsalted Butter, diced
120g Buttermilk
2 nos Whole Eggs
50g Dried Cranberries
50g Dried Raisins
70g Dried Orange Peel

PROCEDURE

  1. Pre-heat oven to 180°C.
  2. Blend together all of the dry ingredients and sieve.
  3. Mix together diced cold butter and flour mixture by hand until crumbly dough is formed.
  4. Gently fold in buttermilk and eggs until dough ball is formed. Do not over fold as the dough should not be too smooth.
  5. Fold in your desired dried fruits. Rest for 10 – 20 minutes at ambient.
  6. Roll out the dough to about a height of 2cm. Then, divide the dough into triangles of equal size. Use a brush to apply egg wash.
  7. Bake at 180°C for about 25 minutes or until the top is golden brown.
