Earl Grey Sugar Cookies


195g Prima Top Flour
65g Prima Superfine Wholegrain Flour
120g Unsalted Butter
(Soften at room temperature)
112g Vegetable Oil
100g Caster Sugar
60g Icing Sugar
1 no Egg
1 tsp Vanilla Bean Paste
½ tsp Baking Soda
½ tsp Salt
2 sachets Earl Grey Tea Leaves


  1. Preheat the oven to 170oC.
  2. Mix Prima Top Flour, Prima Superfine Wholegrain Flour, baking soda and salt together. Sift and set aside.
  3. Mix unsalted butter, caster sugar and icing sugar on high speed until light and fluffy.
  4. Gradually add in oil and continue on medium speed until combined.
  5. Add egg, vanilla bean paste and tea leaves into the mixture.
  6. Slowly add flour mixture on low speed mix until combined. The dough will be soft.
  7. Refrigerate the dough for 1 hour for easy handling.
  8. After refrigerating, scoop 1 tbsp of dough and press the dough down on the baking pan to flatten it slightly. Sprinkle some caster sugar on the surface of the dough.
  9. Place the dough 1.5 inch apart and bake for 10 – 12 minutes.
  10. Once baked, cool it on the baking sheet for 5 minutes. Set aside on cooling rack before serving.
