| 150g | Prima Self Raising Flour |
| 50g | Potato Starch |
| 1 can / 250g | Whole Kernel Corn (Drain liquid) / Fresh Corn Kernel |
| 1 handful | Coriander Leaves (Chopped roughly) |
| 1 stalk | Spring Onion (Chopped finely) |
| 1 no | Yellow Onion (Medium, diced finely) |
| 1 tsp | Garlic & Pepper Spiced Blend / Garlic Powder & Black Pepper Powder |
| 1/2 tsp | Salt |
| 1-2 tsp | Sugar (Depending on preference of sweetness) |
| 1 no | Egg (Lightly beaten) |
| 30-60ml | Ice Cold Water / Ice Cold Milk |
| As desired | Oil (For deep frying) |
1. In a large bowl, mix Prima Self Raising Flour, potato starch, garlic & pepper spiced blend, salt, and sugar.
2. In another bowl, whisk together the egg and 30ml of ice-cold water or milk.
3. Pour the egg mixture into the flour mixture and stir until a batter forms.
4. Add corn, coriander leaves, spring onion and yellow onion into the batter, mixing until well combined.
5. Gradually add the remaining cold water or milk if needed to thin the batter.
Note: The batter should be thick enough to coat the vegetables.
6.Take a spoonful of the mixture and gently drop it into hot oil (180–185°C). Deep fry in batches until golden.
7. Remove the fritters and drain on paper towels.
8. Transfer to a plate and serve warm.
